Olio Di Oliva
We apply the same uncompromising, nurturing principles to the production of our organic olive oil as we do to our wines. The important factors contributing to making ours one of the finest Tuscan oils are: A rocky soil, early harvest, and a gentle unfiltered settling preserving the richness and texture of our oil. The lovely greenish colour and intense artichoke flavours mixed with the scent of meadow grass produce a rich, peppery finish great as an accent as well as being suited to most culinary preparations as it mellows with age.
Produced in small quantities from our Moraiolo, Leccino, Frantoio, and Pendolino trees, the oil is harvested by hand and cold pressed on the same day ensuring low acidity and freshness that can, unlike other oils, keep under cool dry conditions for many years.
